Nutty Power Balls

This is another wonderful easy and healthy snack recipe and the results are delicious. You could probably take them on a long bike ride too as a nice little real food protein power boost.

1 cup Pecans

1/2 cup walnuts

1 cup granola

1/8-1/4 cup honey (less is more with sugar)

1/4 tsp vanilla

I have a Vitamix blender which is heavy-duty. If you don’t have one, I’d use a Cuisinart so you don’t blow out your blender. Put granola aside and blend other ingredients until a nice wet texture. Add granola and blend again.  Roll into balls (about a dozen small balls) and refrigerate. The granola gives them a wonderful texture. I used Purely Elizabeth’s (not mine) granola which is gluten-free and very crunchy. You could also substitute other unsalted nuts, but choose at least one harder nut for texture because you don’t want this to become a nut butter, although that would be good too.  Enjoy!
