It’s my responsibility to bring the salad for Thanksgiving dinner. Since I recently stocked up on some beautiful kale at the final farmer’s market of the season, I thought this would be a healthy and delicious addition to all the other goodies. It’s the Tuscan Kale Salad I make with a twist of adding apples, roasted pecans and lemon zest. It’s a very simple and healthy addition to your feast. Make the dressing, toast the pecans and crush them, chop apples (skin on is fine), zest lemon and toss, adding salt and pepper to taste.
Try to do a quick workout or Turkey Trot in the morning to get your metabolism moving for the day. Enjoy and Happy Thanksgiving!
