In the process of making my kale salad I decide to go off on a tangent and throw a few things in the Vitamix. I read about a white bean and kale dip on Emmy Cooks and that was my inspiration. I didn’t have the white beans so I improvised and it came out fantastic, enjoyed by all. I was cooking for a big group, but I think this is a great item to stock in the fridge for a snack.
2 cans of beans (I used 1 pinto and 1 garbanzo)
2 cups minced kale (I used 1-1/2 handfuls)
2-3 cloves garlic minced
2/3 cup olive oil
1/3 cup water
1 tbsp salt
1 lemon juiced
Add ingredients and pulse until smooth. Taste at the end to make sure you’ve added a sufficient amount of salt and lemon, which really makes the flavors pop. Enjoy with chips or veggies!
