Healthy Fries

Sometimes the veggie burger and salad menu needs some perking up and who doesn’t love a good chip? This is such an easy and healthy way to have some fries that you are going to want to do this at least once a week. The coconut oil not only smells delicious, but it’s really quite good for you. Also, coconut oil is a great medium for high heat and gets the potatoes wonderfully crispy.

This is for 2-4 servings:

2 baking potatoes
1 sweet potato
1/2 Tbsp minced rosemary
1-2 Tbsp coconut oil
Salt and Pepper to taste


Wash and chop the potatoes with their skins long ways (as you would a lemon) so that they look like steak fries. It’s nice to mix in a sweet potato for the beautiful color along with some vitamin C and beta-carotene, among other health properties. If the coconut oil is thick and white, you’ll want to heat it so it melts. Use a stainless bowl and toss the potatoes with the oil. When covered, add rosemary, salt and pepper and toss again. Put on a baking pan and put in the oven. I have a special roasting feature so I can do 425 for 30 minutes. Depending on your oven this might take a bit longer–perhaps 45 minutes. Add a bit more salt and pepper if necessary and voila! Enjoy some fairly guilt-free french fries! If you do have leftovers, they go nicely with eggs the next day.

    1. That sounds good too Rose! What temp/time do you put your oven on? I think you’ll like the coconut oil–it really tolerates heat better and makes such a good crisp–or you might use a bit of both. I’ve done that too. πŸ™‚
